I am so lucky to be able to buy organic vegetables locally. The vegetables are just picked up the day before the market day. Some of them last more than two weeks!
Simple salad using the vegetable we have just bought. Sprinkle a pinch of salt and some sesame seed on salad leaves. Drizzle good quality olive oil or flaxseed oil and squeeze fresh lemon juice. Toss them gently. We often have this with my favourite rye bread from Poilane in Sloane square, London. Very useful to keep in the freezer.
